My favorite healthy snacks with Nuby

It is Monday & after this Father's Day weekend, I am ready to eat healthier!  We had a very simple & relaxed Father's Day, starting with a delicious breakfast with some friends & then a long walk around Boise.  We finished the day off with some burgers & a Costco frozen yogurt!  We are so thankful for Matt, & Oliver looks up to him so much.  Hope you all had an enjoyable day celebrating your dads/husbands! 







Since we didn't really eat very healthy this weekend, & I know new beginnings always start on a Monday, I thought I would post a few healthy recipes & also some of our favorite snacks that we take to-go!  These recipes & snacks are super easy & hardly take any time.  These are all snacks that we as a family love, & the best part is that they are healthy + taste amazing!

When we lived in Virginia, I used to meal plan & prep the food every week.  Since we moved to Boise, its been pretty busy around here, so I have been slacking BIG TIME!  Last night I decided to prep a few snacks for Oliver & myself, since I knew we would spend the morning at the park.  The super easy snacks that I prepared, took NO time at all.  I put together blueberries, strawberries, carrots & then some sweet potato crackers from Costco, in these little Nuby Wash & Toss Stackable Bowls.  These bowls are the perfect size for snacks to take on the go!  They hold 8oz of food & they are pretty much kid-proof with the lid on!  Let's just say, they may be adult-proof, since sometimes it takes me a minute just to get the lids off!  I consider that a good thing though, since I never have to worry about them leaking or spilling.  I love just filling them up & then stacking them in the fridge for easy access.




We bought Oliver the cutest Skip Hop Fox "pack pack" (as Oliver calls it) from Target for his birthday. It is the perfect size to place all of Oliver's snacks/toys/trains/diapers/wipes & an extra pair of clothes.  Plus, on the side, it has a place where Oliver can put his Nuby straw cup filled with water!  


Some other healthy snacks that I store in these Nuby bowls are apple slices with almond butter,  raspberries, mixed nuts, hummus, raw nut bites, graham crackers (which never break or crumble in these bowls, unlike in plastic baggies), bell pepper slices & cubes of cheddar cheese.  You can really put anything in these little bowls & they come in a pack of six different colors!




As you can see, we had a little picnic at the park, but I forgot sunscreen (I'm a horrible mother), so we had to leave a little early.  Oliver wasn't to excited about that, but since I told him we were going to go swimming later, he ended up being okay with leaving the park early ;)

As I promised, here are a few recipes that are staples in our home.  I didn't take any pictures of my hummus, but I provided the recipe down below that we use.  I hope you all enjoy & let me know what are some of your favorite & healthy snacks!


Raw Nut Bites

Ingredients:

1 cup pitted Medjool dates (can soak in water beforehand so they are nice & soft)
1/4 cup raw almonds
1/2 cup raw cashews
1/3 cup unsweetened shredded coconut
1 TB flax seeds

Directions:

Using a food processor (or a tough blender), blend/pulse all ingredients together until it looks like the picture above.  Remove mixture from food processor/blender & place on a plate.  Then, take a small amount of the mixture & roll into a ball using your hands.  You should make the bites so that they are bite sized.  I even make some really tiny, that way Oliver can easily eat them.  Store in an airtight container either in the fridge or the freezer.  In the refrigerator, they should last up to a week & the freezer, usually about three months.


Hummus

Ingredients:

1 can of chickpeas
1 lemon
3 TB extra virgin olive oil
2 garlic cloves
1 tsp cumin
salt + pepper
2 TB tahini
4-5 TB water (for consistency)
Optional: 1 tsp cayenne pepper

Directions:

Place all ingredients in a food processor/blender.  Pulse or blend ingredients & add water as you go to get your desired consistency.  Then store in an airtight container in your refrigerator, which should last about a week!
