Pinterest Friday: Gluten & Dairy Free Fall

Hello October!  

Oh, I am so excited it is finally October!  I have been waiting for this month since I heard that this is the month where the weather here in Virginia starts to feel like Fall!  The leaves outside our place have already started to turn red & I know it is just a matter of time before we start to see the vibrant Fall colors.  Anne of Green Gables put it perfectly when she said, "I'm so glad I live in a world where there are Octobers".  Well said little Anne, well said!

Do you guys remember when I made the gluten free pumpkin spice waffles a couple weeks ago?  Well, I decided to try out some Gluten Free Pumpkin Spice Muffins & searched high & low on Pinterest until I found  this blog called  Detoxinista.  She has a delicious Pumpkin Spice Muffin recipe that is also paleo!  Since I love all things pumpkin & wanted a recipe that Matt could enjoy, I decided to make these a couple days ago.  I am always skeptical when trying out gluten free recipes because for one, you never know how they may turn out & secondly, they always use so many flours that I usually don't have on hand that it makes it harder to find a simple gluten free recipe.  All that being said, the reason I chose these particular muffins was that this recipe only contained coconut flour (which was already in my pantry), plus they are pretty quick to make.  I added 1/4 cup of dairy free chocolate chips to mine, which just amplified these muffins even more.  Also, she calls for ginger, cloves & cinnamon for the spice, but I just bought Trader Joes Pumpkin Spice, so I wanted to test it out.  Other than those two add ons/ substitutions, these were really great, but I will say, make sure you have a glass of milk/coffee/tea/water on hand, because they can get stuck in your throat pretty easily (so small bites)!  Also, if any of you know how to make gluten free breads fluffier/lighter & not so dense, LET ME KNOW!  Haha, it never turns out light for me..  If you want the recipe, click HERE for her recipe.  Let me know if you all decide to try it out & if you added or took out anything!
