Coconut & macadamia nut banana bread

Since being in Hawaii, we have been making banana bread non-stop since my parents have a bunch of apple banana trees in their back yard!  If you have never tried an apple banana, you are missing out!  They are smaller, but sweet as can be.  I have always loved banana bread & have made different variations to it, some with chocolate chips, others with almonds & coconut flakes & since we are in Hawaii, we decided to do macadamia nuts with coconut.  This bread is gluten free, but full of flavor & I almost prefer it than the ones I have made with flour.  I haven't tried to make it vegan yet, but if you do, let me know how it turns out!

COCONUT & MACADAMIA NUT BANANA BREAD

Makes 1 loaf

Ingredients:  

3/4 cup almond flour

1/4 cup coconut flour

3/4 tsp baking soda

1/2 tsp sea salt

2 TB. coconut oil

1 tsp vanilla extract

3 eggs (if vegan, you can try flax eggs)

2 ripe bananas

1/4 cup honey (agave or maple syrup if vegan)

1/2 cup shredded sweetened coconut

1/3 cup chopped macadamia nuts

 

Directions:

Preheat your oven to 350 degrees F.  Use a smaller loaf pan if you have (I only had a regular sized one & it made a thinner bread) & spray with coconut non-stick spray or whatever non-stick spray you have.  I would almost suggest using parchment paper & covering the loaf pan with that, since it will make the bread come out better.

In a separate bowl, whisk all the dry ingredients (minus the shredded coconut & macadamia nuts), set aside.  In another bowl, whisk all the wet ingredients & then add to the dry ingredients & using an electric blender, blend all ingredients.  

At the end, add the shredded coconut & chopped macadamia nuts to the batter & stir in until well incorporated.

Pour batter into the loaf pan & bake for about 45-50 minutes until toothpick inserted in the middle comes out clean.  Let the loaf cool on a cooling rack & then serve.  We served ours with fresh fruit & more coconut! 

One banana bread loaf made about 7 slices with the regular bread pan & it was gone seconds after these photos were taken!  I have probably made this bread four times.  I did double the recipe, but it didn't work well for me.  It would also make really good muffins!  If you try this recipe, let me know in the comment section below, how you like it or if you used different ingredients!
