Easter


(This was an Easter gift from his aunties!)

Hello everyone!  I hope everyone had a lovely Easter weekend & that you all had a relaxing day this past Sunday!  Easter is probably my second favorite time of year (Christmas is number one), not because of all the Easter baskets or pretty outfits, but because it's a time where people remember that Christ died for us all & saved us from sin & death.  Two beautiful songs come to mind when I think about what Christ has done.  I can't help but tear up (& maybe ball my eyes out) when I think of Jesus' love for each one of us & how He laid down His life for each one of us.

Our week has been pretty busy, Matt has been studying so hard & had an important paper due Easter, so our Sunday was a bit boring.  We actually slept in a little on Sunday morning (Matt was working on his paper till about 2 or 3am??) & then when Ollie woke up, we took him out to the living room where he got to open a few gifts my family sent him and a few things from us.  My parents got us a Mickey Mouse waffle maker for Easter & I was so excited!  We had one growing up & I wanted to keep that tradition alive for Oliver, so this was the perfect gift, plus, we LOVE waffles.  I had some spring sprinkles, so I made gluten free funfetti waffles!  Matt took Ollie & bought us some coffee & then we sat around our kitchen table & hung out for a bit which was really nice.  Then Matt had to go back to our room & work on his paper.  So, Oliver & I went to the grocery store to pick up a roast since that is what we decided to have for Easter!  And, if any of you are wondering, I took the day off from the detox.  I know that I probably shouldn't have, but it was Easter ;)  





We also didn't go to church, which I was really disappointed with...  This was the first Easter EVER that we missed church.  I did try & explain to Oliver what Easter's true meaning was, but I don't know if he really understood ;)  


The rest of the day, Oliver literally played by himself ALL DAY with all his new goodies (& he loved his plastic eggs!), so that was nice for me, because I just spent the day cleaning & making the roast.  In case any of you are wondering, I use Ree Drummonds' ( The Pioneer Woman) Perfect Pot Roast recipe which you can find if you click here.  Seriously, everything I make of hers is delicious!  Since she does use a lot of dairy and gluten, I try & substitute when I can!  Sorry, it was a pretty uneventful day.  I really felt bad for Matt.  He went to bed around 1am & then had a class this morning at 8am!  At least his paper is finished & things will get back to normal (besides when FINALS come!!!).  

I really hope you all had a beautiful day & I loved looking at everyones Easter pictures yesterday on Instagram & Facebook!  Matt did take a few pictures of Oliver & myself, which I absolutely LOVE!  Here are a few ;) Hope you all have a wonderful week!
