did you say pumpkin spice waffles?
Fall is here! Okay, so it's not jacket weather yet where we live, but it is out of the 90's so I am pretty excited! Fall, hands down, is my favorite season. There is nothing better than getting all cozy & going for a brisk walk while sipping on a warm coffee (or tea). Fall also means that it is finally time to bust out your boots & scarves! I seriously have way to many scarves, but I love it! I have been waiting all summer for fall... Is that wrong? I get all giddy when I start to see the leaves change color & we are really excited to see what fall looks like here in Virginia! Also, just so you all are aware, Starbucks is having a buy one, share one ~ any fall drink from 2-6pm! And the best part is that it starts TODAY & ends the 21st! So grab your favorite person & get a pumpkin spice latte or salted caramel mocha :)
Speaking of pumpkin spice, I seriously love making it every year! It is just 4 simple ingredients: cinnamon, ginger, nutmeg & cloves (easy on the cloves, unless you like cloves, then go all in!). I use this pumpkin spice in so many different fall time recipes! Whether it is bread, muffins, cookies or my very favorite: waffles! Our little family has a Saturday waffle tradition. When Matt & I were first married, we dedicated Saturdays as waffle days. We get really creative & change up the recipe all the time. We have made chocolate chip waffles, banana waffles, gingerbread waffles & molasses waffles. We use
Bobs Red Mill gluten free pancake mix as the base & it is THE best gluten free mix in my opinion! Recently, we have ventured out just a little & bought
Maple Grove Farms gluten free pancake & waffle mix from Target. Matt says that he likes it better than Bobs but I am still on the fence. Either way, they are both pretty good, but for this post I will be using the Maple Grove Farms mix. Now for those of you that can eat gluten, go ahead & sub out the GF mix with one of your own!
Pumpkin Spice Waffles
1 cup pancake/waffle mix (we used the
Maple Grove)
1 1/3 cup coconut milk
1 egg
1 Tablespoon oil
1 1/2 teaspoon pure vanilla extract
1 1/2 teaspoon pumpkin spice
1 Tablespoon pureed pumpkin
{Pre-heat your waffle iron}
1. Mix all wet ingredient first & then add the dry & mix with a wire whisk or fork.
2. I spray the waffle maker with
Trader Joe's non-stick coconut spray & it works really well.
3. Pour batter on waffle iron & cook!
4. Makes about 6 waffle squares

Seriously, so easy & it tastes so good! Tastes like a perfectly overcast fall morning, which is exactly what it is like today! Top it off with some coconut or whipped cream (
