cookies to brighten your day

I know, I know... ANOTHER cookie recipe, seriously though, I cannot help myself!  I have had a cookie craving & finally made some yesterday!  I took a really great cookie recipe & made it dairy free.  I try to limit my dairy intake as much as I can, but I still eat chocolate.  Without chocolate, I do not know what I would do!  Also, if you are lucky enough to have dairy, you can totally substitute the dairy free items with dairy filled.  This recipe is super delicious!  I really like using coconut oil in cooking & baking, it adds such a great flavor.  Side note, I really like the Enjoy Life dairy free chocolate... Way better than carob chips (in my opinion)...  I really hope you guys enjoy this recipe!

Dairy Free Coconut Chocolate Chip Cookies

Ingredients:

3/4 cup granulated sugar
1 cup light brown sugar
1 cup coconut oil, melted
1 TB pure vanilla extract
2 eggs
3 cups all-purpose flour
3/4 tsp baking soda
3/4 tsp fine sea salt (kosher is fine too)
1 cup unsweetened coconut flakes, optional

Directions:

preheat oven to 350 degrees F

1.  Combine sugars & coconut oil, cream
2.  Add vanilla extract & eggs, mix well
3.  In a separate bowl, mix flour, baking soda & salt
4.  Add flour mixture to sugar mixture & mix well (dough should be stiff)
5.  Mix in chocolate chips & coconut flakes


Line a cookie sheet with either parchment or wax paper.  Drop dough by spoonfuls & bake for 10-12 minutes.  Remove from oven, then cool on wire racks.
