gluten & dairy free coconut almond dark chocolate cookies

Coconut + dark chocolate = heavenly bliss!  Then when you incorporate them to make a dairy free & gluten free dessert, it's a win win for Matt & I!  Usually I shy away from making anything gluten free by scratch because I hardly have any luck with how it turns out, but I thought I would finally try to make these cookies since Matt sent me the recipe in an e-mail way before Christmas ;)  Matt calls me a cookie snob (I really dislike store bought cookies...they aren't fresh), but these were delicious!  Even if you eat gluten & dairy, these are still really yummy!  There really isn't much to these cookies as far as ingredients go & it doesn't really take a lot of time to make them.  You might want to double the recipe because they go fast :)  Hope you enjoy!

Gluten & Dairy Free Coconut Almond Dark Chocolate Cookies
(yields about 20 small cookies)

1 1/4 cup almond meal
1/4 cup dark chocolate chips
1/2 cup shredded unsweetened coconut
1/2 tsp. baking powder
1/4 tsp. sea salt
2 TBS. dark cocoa powder
1/3 cup brown sugar
1 egg
3 TBS. coconut oil, melted
1/2 tsp. vanilla extract

1.  In a large mixing bowl, stir together all the dry ingredients
2.  In another bowl, beat the egg until doubled in volume, then whisk in the coconut oil & vanilla
3.  Add dry ingredients to the egg mixture & mix (the mixture won't be very creamy)
4.  Chill in the fridge for 30 minutes or overnight (I left the batter overnight)
5.  Preheat oven to 350 F
6.  Shape cookie dough into 1" balls & place on cookie sheet.  Then smash them down gently until a little flat (the cookies will not spread in the oven)
7.  Bake 7-10 minutes (I baked mine for 8 minutes & they came out soft & perfect)
8.  Let cool on pan, then try not to eat all the cookies ;)
