Spaghetti all' Amatriciana
This has been our "go-to" dish for dinner! It is hearty, warm & savory. This dish is also
very
simple, which is why I love it! My friend, Veronica, is from Italy & taught me how to make this meal. The sauce for Spaghetti all' Amatriciana, is originally from Amatrice, in the province of Rieti, Italy. I adore Italian food, but since I cannot have dairy, I am limited as to what I can have since most Italian dishes contain cheese. This dish is perfect. The original recipe you add parmesan or pecorino, but this is the non-dairy version. Still very yummy!
4 TBS olive oil
6-7 slices of bacon, cut into strips
1 onion, chopped
1 tsp black pepper
1 TBS garlic, finely minced
16 oz. pure tomato sauce or tomatoes, cut in small pieces
12 oz. pasta noodles (penne is preferred, I only had gluten free shells)
-Heat large skillet over medium heat, add olive oil
-Put in chopped onion, put stove on med-low, stir frequently
-After about 5 minutes, add bacon & black pepper
-Stir occasionally
-(bacon will not get very crispy because of oil)
-Once the onions are translucent in color & bacon looks cooked, add garlic & stir
-Then add tomato sauce or tomatoes, turn stove on low heat, put lid on skillet
-(at this time you can start boiling the water for pasta & cook pasta until al dente)
-After about 10 minutes, throw in the cooked pasta & mix together
-At this point, you can add pecorino or parmesan cheese

This was back in 2005, when my sister & I studied abroad in England & took a holiday to Venice. We looked so young! This past trip to Arizona, we all reminisced about this trip... lots of funny stories!
