last nights dinner...

As promised, here are the recipes for this scrumptious meal!

The coconut & macadamia nut crusted chicken I had written down in one of my recipe books so I'm not sure where the recipe is originally from...


Coconut & Macadamia Nut Crusted Chicken

4 boneless, skinless chicken breast
1 1/2 cups flour (I used gluten free)
4 eggs
3 cups chopped macadamia nuts
3 cups shredded coconut
3 tsp. salt
1 1/2 tsp. pepper
6 TBS. canola oil

Heat oven to 400 degrees F
Slice chicken into strips
Place flour in a medium bowl
Whisk eggs in another bowl 
Combine macadamia nuts, coconut, salt & pepper in a medium bowl
Toss chicken in flour, then egg bath & finally the dry mixture
Place strips on a cookie sheet lined with parchment paper
Next, heat large skillet over medium-high heat
Add oil, let heat up a bit
Place prepared chicken strips in skillet and cook for 3 minutes, then flip to the other side for 3 minutes
Then place the chicken back on the cookie sheet 
Place in oven for about 10 minutes so that chicken can be cooked thoroughly
(Careful to watch chicken because you do not want the coconut to turn black)
